Almonds Almonds The almond is the edible seed of the almond tree, a plant height of about 10 meters in the family Rosaceae. Bitter almonds are not suitable for human consumption as they contain a toxic glucoside (amygdalin) which is inactivated with prolonged cooking. More than an almond is bitter and the greater its power poison. Extracts of these seeds are used in small doses and harmless in the preparation of sweet specialties such as the macaroons. Almonds in shell, if stored in a cool dry place, will keep easily for a few months.
